An Arrancar's Zanpakuto is the center of its power and is sealed away in the form of a sword.

This means that even though we call them Zanpakutos, they're different from that of a Soul Reaper's.

A very good question. For an Arrancar, releasing their Zanpakuto means returning to their true form.
